The RTK/TFW Project: Collin's "Thomas" Hummus

TFW has a new cookbook coming out. If you can't beat 'em join 'em, right? Resident poster Silimom offered to give the recipes a fair shake, following them as closely as possible and getting her family's input, too. Other posters might chime in with their attempts as well as we go along. So in the spirit of the Julie/Julia Project, in which government worker Julie Powell spent one year cooking her way through every recipe of Julia Child's Mastering the Art of French Cooking, here is our Reality T.V. Kids/The Former Wife Project, as we cook our way through Kate Gosselin's Love Is In the Mix.

First up: Collin's "Thomas" Hummus prepared by Silimom

The Cost

Since Kate has stated in the past that she cooks with ingredients labeled “organic”, I decided to do the same in order to keep the recipe as true as possible to the way she might make it at home. With that in mind, I grabbed my reusable bags and headed to my local Whole Foods.

Whole Foods is an experience, for anyone who hasn’t been to one yet. It’s as if they filter the air with some sort of chemical to make you feel more virtuous and healthy once you walk through the doors. I don’t tend to shop here, as a rule, because they don’t tend to carry the convenience foods my family eats. I do like to go here for my meats and, until the farmer’s market opened up down the street, sometimes vegetables and fruits, especially ones my local Safeway doesn’t carry on a regular basis. We also tend to call Whole Foods “Whole Paycheck” because the prices, for the most part, tend to be higher, especially on their convenience foods.

Here’s what I bought, including the prices:

Organic 365 Vegan Pita Chips with Sea Salt 9 oz $2.79
Organic 365 Tahini $5.99
Organic 365 Extra Virgin Olive Oil (Cold Pressed, 16.9 fl oz) $5.99
Organic 365 Garbanzo Beans 15 oz $1.19 each = $3.57 for 3 cans (I couldn’t find 16 oz
cans anywhere)
Total spent: $18.29

Now, Kate also calls for 18 Tablespoons or 1.125 cups of lemon juice. Whole foods sold a 2lb organic bag of lemons for $5.99 or individual organic ones at $0.99 each. However, I have both half a bottle of Safeway reconstituted lemon juice (15 Fl. Oz. @ $2.79 per bottle) and also a lemon tree (or rather my neighbors have a lemon tree that happens to hang over my fence) and while they are not certified organic by the USDA, I feel fairly confident these lemons will be close to organic, as they do nothing to the  tree - no pesticides, no fertilizer, etc. I also had garlic and salt at home, however here’s their cost from the Safeway, where I purchased them:

Garlic (non organic) - $0.79
Safeway Iodized Salt (non organic) $0.94

So total cost of combined Whole Foods and Safeway ingredients: $26.06. Now, if I had bought all the ingredients at Safeway, which is where I usually shop, this would have been my bill:

Safeway O Organic Garbanzo Beans 15 oz: $1.33 per can/$3.99 total
Safeway O Organics Extra Virgin Olive Oil 16.9 fl oz - $8.49
Safeway Open Nature Pita Chips with Sea Salt 8 oz- $2.50
Safeway Lemons (regular - could not find the organic price online) - $3.29 for a 2lb bag
Whole Foods 365 Organic Tahini Paste - $5.99
Garlic (non organic) - $0.79
Safeway Iodized Salt (non organic) $0.94

(They didn’t have Tahini Paste at Safeway, so I would have still needed to pick that up at WF. )

Total: $25.99

I’ll admit, I was surprised here. I assumed that Safeway would be cheaper, even with  buying organic. Okay, maybe I’ve been giving Whole Paycheck a bad rap for years. But what would the cost be, I wondered, if I bought primarily non-organic, which is my typical shopping habit?

Safeway Garbanzo Beans 15 oz - $1.09 per can/$3.27 total
Safeway Verdi Extra Virgin Olive Oil 17 fl. oz. - $5.99
Safeway Open Nature Pita Chips with Sea Salt 8 oz. - $2.50
Safeway Lemons - $3.29/2lb bag
Whole Foods 365 Organic Tahini Paste - $5.99
Garlic (non organic) - $0.79
Safeway Iodized Salt (non organic) $0.94

Total: $22.77

Okay, so going organic, at least for this recipe, isn’t all that much more expensive than the non organic. However, considering a 10 oz package of Sabra Roasted Garlic Hummus runs me $5.49, I think I’d save myself the $18 and just buy that. It’s very yummy and since only my husband and I eat hummus at our house, it lasts us about a week just fine. However, to really know if “do it yourself hummus” is a value, I’d have to figure out the individual serving cost of the homemade version vs the prepared, store
bought hummus. Sabra’s 10 ounce container, which is what I buy, serves 10, so I’ll use that serving size in my comparison.

Whole Foods: $2.61
Safeway Organic:  $2.59
Safeway Conventional: $2.27
Sabra Hummus: $0.55

Cost grade: D - The organic ingredients were cheaper then I thought they’d be, especially when compared to conventional products, however at 55 cents per serving, the Sabra hummus is much cheaper.

The Process

I decided to use a blender rather than my food processor so I could be as true to Kate’s recipe as possible. I drained the chickpeas, putting a small, glass bowl under the wire colander to collect the juice. Normally, I would also rinse the chickpeas, but, again, I was going for authenticity here.

Next, I measured out my lemon juice. For the record, I have a hard time with her units of measurement. I mean, how hard would it have been to google “18 Tbsp to ounces?” It took me less than 30 seconds. By the way, 18 Tbsp is 9 fluid ounces. Wouldn’t that be easier for most home cooks? I mean, since lemon juice in a bottle is measured in ounces, not tablespoons, after all. Or if you wanted to use measuring cups, it’s 1 C plus 2 Tbsp of juice.

I used up my bottle of reconstituted lemon juice (non-organic, I know, but I just couldn’t  spend $5.99 for a bag of lemons.) which gave me about 6 oz and supplemented this with 3 lemons from “my” tree, which yielded 3 oz (FYI, one lemon yields about one and a half ounces of juice. I just used what I needed to make 9 oz. total).

The rest was pretty simple. My husband minced the garlic for me and then we literally dumped everything in the blender and hit “puree”. In about 3-5 minutes, we had hummus.

So, for ease of directions I give this recipe an “A-”. The minus is in regards to the how she lists her units of measurement.

The Taste Test

The guinea pigs in this situation were myself, my husband and my 8 year old daughter. The texture was not as smooth as I could make it in my food processor but overall it was pretty good. It certainly wasn’t overly grainy. It was, however, very thick. It was also EXTREMELY tart because of the amount of lemon juice. In fact, both my husband and I agreed that the acidity of the lemons really overpowered the garlic and sesame taste, making them virtually undetectable. I think reducing the lemon juice by half, increasing the garlic by 2 additional cloves, and adding a tablespoon or two of water to the blending process would help both the flavor and the thickness.

My 8 year old tasted it with her finger and said “I don’t like this hummus.” Now, in Kate’s defense, my 8 year old hates hummus anyway, but she was a good sport and tried some. Both my husband and I finished our 1/4 cup portions, which we ate with pre-bagged organic pita chips and baby carrots, so it certainly was not inedible. I would probably give it about a 3 on a scale of 1 to 5, 1 being inedible and 5 being the best thing I ever ate. My husband gave it a 3 also, saying “It’s a serviceable hummus”.

Grade for Taste: C - Just way too much lemon juice.

Four days later, we still have about half of the hummus left in the fridge. My husband and I are working through it slowly.

Nutrition

Because I use the app My Fitness Pal, I can use their recipe nutrition calculator to get an idea of what the nutritional breakdown of her food is. For those of you who are interested, here it is:

Total per serving:

Calories 342
Carbs 26
Fat  22
Protein 10
Sugar  4
Fiber   9

Wrap Up

My biggest issue with her recipe isn’t the taste. I can tweak that easily and honestly if I just cut the lemon juice in half, it probably would be good (a grade of B).  It is the amount of hummus her recipe makes that is more of an issue for me. It could certainly feed 9 people easily. But I personally don’t need that much food. As you can see from the picture, her recipe filled a pretty large bowl. Kate needs to remember that not everyone has 8 kids. Now, if she were just posting this on her website, that would be one thing. Sure, people can cut it in half themselves. But if you’re putting out a cookbook, you need to respect your audience and most of the people who might buy this book have 2-3 kids tops. If this is going to be the standard result, it’s going to be way too much food for my family and most will likely go to waste. I think the next recipe I make, I will try to cut it in half and hopefully that won’t alter the flavor/taste significantly.

Overall, this was a fun experiment and I am looking forward to more “Cooking Dangerously” with Kate Gosselin.

The cost shocked me. Since storebought hummus is actually pretty decent, sounds like that's the way to go if your concern is saving money.

Kinda funny, since Kate always emphasized saving money. Cooking/baking from home does not ALWAYS save money. It depends. Specialty ingredients and in particular a lot of baking supplies drive up the price.

For instance good quality chocolate chips are usually at least $3.50-4. But you can buy the ready bake cookie dough for like 4 bucks. When you add up all the other ingredients for from scratch, the ready bake is CHEAPER.

I think that her fans are somehow emotionally attached to TFW, and see any bad comments about her as an attack on them. Kinda sorta the way a mother will attack anyone that does anything against her child?

So...all that frantic DM back and forth was because someone found the information about one of TFW's corporations again? I've seen that same information more than once, hasn't everyone? One is all up in arms calling it ''stalking''? I'm just shaking my head at the things that get her fans in frantic private conversations about how to deal with public information about TFMJG. I guess they all have short memories, and don't remember that this is all old news. On the other hand, seeing them all in an uproar does entertain me...so there is that! lol It would be poetic justice if all their tattle-tailing ended up as an article on ROL about TFMJG's corporations!

Is Lana the one they were saying was suspended, or was suspended twice? I can't keep up with who is who in the pasture!

I don't understand why these fans think that Kate is too good to get a job. Are they afraid she might get her hands dirty doing mediocre work? It's beneath her? The excuse that all her income would go to sitter is just baloney. She could work from 8 to 5. They'd take a late bus home and she wouldn't have to pay a sitter. She'd be home with them on weekends when they aren't with Jon. Is the reason she refuses to find employment because she still believes the networks will be knocking on her door, or is she just too darn lazy and feels that she is still entitled to the lifestyle she once knew? Once a star, always a star?

Admin - Thank you for the post! It looks great!

A comment on the cost of homemade vs store bought: My comparisons were based on 10 servings, which is what the store bought hummus lists as their serving size (1oz = 1 serving).

Her hummus, though, made way more than that. We hauled out the bowl we used and the measuring cup and it looks like her recipe makes about 28 oz. in that case, homemade is a cheaper way to go if you REALLY like hummus or have a large family, like she does.

For the average Joe/Jane, like my family, it's not.

Silimom said... 21

People (fans and haters alike) have to get up in arms about old info that's been public for years because that's all there is - old news.

I'm curious to see if she finagles some tv interviews - Today, The View, etc. I also really hope someone goes to the book signing in Baltimore (? Is that the right place?). I want to hear what professionals have to say about her food.

Someone said she is likely a passable home cook. I would agree. But she wouldn't last 5 minutes on Masterchef.

JoyinVirginia said... 22

I love the recipe analysis! Thanks so much to silimom and her family for volunteering!
re organic vs nonorganic: I have some friends who own a small farm. They grow most things without pesticide, and could get organic certification from USDA, but the paperwork to get the certification and maintain it is extremely time consuming. They have decided not too go for certification now, they don't think any profit would balance out the cost of keeping up with the paperwork.
so that lemon tree sounds organic enough to me!

I know it's so funny. As I recall no one was particularly upset or shocked when we found out. It is what it is. A corporation is just a way to limit your taxes and protect your assets if you ever get sued. I'm willing to bet most celebs who ever sell you something, which is most of them, do the same. Anyone can start one, it's not something special.

It's actually a smart idea if you have any intentions of running a business. The old "piercing the corporate veil" concept from law school. Always better to have them sue the corporation than to sue you individually. When you start making boatloads of money, you have to think about what might happen if you ever get sued. What if say someone sued Kate over some endorsement she made that went badly for them? Kate could protect herself by hiding behind the corporation--smart, and common.

In CA I believe it's 900 bucks to incorporate. I doubt it's that much in PA. It wasn't like she shelled over hundreds of thousands to form it, and, she probably saved the children hundreds of thousands on their taxes.

Remember she is basically self employed most of the time so if she just goes out on her own without the corporation she gets taxed up the wazoo. I personally would like whatever needs to be done legally to protect the children's money from fees, taxes, lawsuits and the like.

Whoever is advising TFW financially isn't stupid.

Dmasy said... 24

silimom, thank you.

I enjoy details and you brought investigative techniques to a recipe. I got the feeling you made this a family project with everyone taking an interest in your experiment. It sounds like you had fun.

Thanks to Admin for sharing your results with us.

You proved that we all thought at a glance that 18 Tbs of lemon is a pucker factor.

Our neighbor gave us a gallon of fresh blackberries on Friday. Huge, juicy and organic blackberries. I researched cobbler recipes on line and finally decided to use the Pioneer Woman version.

Hubby had no idea who she was. He declared her version to be "magical". The way he was snarfing it down lent credibility to his over wrought words! He suggested that I use her as a fall back for any new recipe that we try.

Actually, I all the ingredients were similar wherever I looked. I think the picture-perfect blackberries might have been the secret to the success. I did reduce the amount of sugar used. I always do that. I also substituted Half N' Half for 2% milk, just because that is what I had in the frig.

Thanks for a change of pace topic. Silimom undoubtedly put more effort into this recipe than Kate ever has.

Thanks for the great article, results and photos, Silimom!

I like Sabra hummus but find it even a bit expensive as we don't routinely have hummus, just now and then.

I also dislike Whole Foods- the expense and the snooty attitude of the customers or maybe that's just me.Trader Joe's is next door and we like it much better.

You and your family did a great job and glad to know the results. I would not make that hummus- why bother? Commercial brands are just as good and more convenient. The acidity does not sound palatable.

Giving an honest review of something doesn't mean that you're a fan nor does it mean that we're scraping the bottom of the barrel. Many of us are interested in cooking and are interested in how her recipes will actually come out. I'd much rather read Sillimom's honest review than a review from a sheeple who will automatically give it a 10 just because TFW "created" it.

==================

When TFW and Jon were married, they also had a corportation called JKIG,Inc. That info came out during the time when both Jon and TFW accused each other of stealing money-the "purse full of bills" incident. I think JKIG, Inc. was also named in Discovery's lawsuit against Jon.

I think there was another corporation also, but don't remember the name. During the separation and subsequent divorce, it would make sense that they dissolved that corporation, and TFW set up one in her name alone. Especially since she was still working for TLC.

So I don't understand why the sheeple went into a frenzy about it. It's no big secret.

Nursing that her paycheck would go to the sitter and she would hardly see the kids.

So how about this how about using her qualification to work at her kids school?

If she did work as a school nurse she could work the same hours that the kids went to school.

You can buy bigger containers of hummus at Costco (Sabra) and Trader Joe's (their label) for less than what is costed out in TFW's recipe. I don't have exact prices at hand but now I plan to check it out. Thanks for proving that the amount of lemon juice is overpowering.

This woman is not a cook worthy of publication. Period.

Realitytvkids.com ~ Administrator said... 32

I believe that's correct, there was a corporation even when Jon was around.

They can just relax about this. A corporation was just good business. Frankly if they didn't do that I would wonder why not and worry the children's money isn't being properly protected. The last thing you do when you become millionaires is just leave it all out there vulnerable. Again, corporations are mostly about protection of money from lawsuits and taxes, period. There is nothing shady about it, it's all legal and good business.

Noticing there is a public corporation is not the same as looking at someone's "account." No one looked at the corporation's accounting if that's even public record, I have no idea.

Pioneer Woman loves when her kids were babies but she also appreciates the here and now. She had this to say about her teenage daughter and I thought it was very sweet:

"I love being around teenagers. As much as I carry on and wail about loving babies and wanting babies and wanting to sniff babies’ heads, I honestly just love this teenage stage. They’re on their way to becoming adults, but they’re still uninhibited and wacky, but they’re intelligent and capable of formulating opinions and arguments, but they’re still kids."

Oh and she's also doing a ton of behind the scenes filming a cooking show posts. Interesting stuff. Most days are 12 hour days.

Spot on article by celebritydirtylaundry regarding TFW's tweet about people impersonating the kids:

http://www.celebdirtylaundry.com/2013/kate-gosselin-twitter-posers-fake-pretending-daughters-mady-children-0812/

Here's an excerpt:

"I have said this many times before, but Kate Gosselin should know better than to bring her children into her Twitter world. I get that she already did that by using them for her reality shows, but after the shows ended, there was no reason for them to be involved in her public profile. Instead, she took to posting about them practically every other day on Twitter, with pictures and everything. She also insists on letting them post on her public website, and she hasn’t ceased posting pictures of all of her kids on her website as well. Obviously, when you’re such a public figure – especially on the Internet – your kids will also become targets.

Considering that Kate doesn’t let her children on Twitter [the one smart thing she did, in my opinion], then obviously there will be posers and pretenders. When there is such a glut of information available on the children, including pictures, it’s easy access and research for anyone who wants to pretend to be them."

Realitytvkids.com ~ Administrator said... 36

How about a part time job AT LEAST? Part time jobs are popular because you don't have to pay benefits. That would solve the problem of babysitters. Besides the kids are almost old enough to stay after school a few hours by themselves. Mady and Cara don't need a babysitter at almost THIRTEEN, sheesh! Not for just the rest of the afternoon until 5 or 6. What will be her excuse when the kids are too old to even need a babysitter?

Had the children simply disappeared it would be MUCH harder to impersonate them. But since we know so much, anyone could do it.

A sheeple doing this would give it a 20 on a scale of 1 to 10. Praising, glowing reviews saying it's perfect and they'll be making it again and again and that Kate is an awesome and amazing cook!

An impartial review is honest, and that's just what was done here. I'm always amazed that critics just can't seem to scroll past. It's really not that difficult. I didn't read the entire thing because I don't shop at WF and the cost differences really don't interest me. But just because I didn't find that part particularly important doesn't mean that someone else wouldn't care about cost comparisons.

You seem to have a problem with most everything that is posted here. Why even bother to read here if so much of it is upsetting?

"Silimom, think of all the great things you could have accomplished during all that! :)"

Good grief -- she made a bowl of hummus. I doubt that she could have solved the problems of the world in that time, or volunteered to feed the hungry in a Third World country! She made one recipe and apparently she and her husband are eating it. Why would anyone care what she did in her own time or that she chose to make this recipe?

You can buy a very big tub of Sabra for about $6.00 at Costco for even more savings. It's about 3x bigger than the store size and is WAY more economical than the recipe. They have big bags of delicious pita chips there too. And isn't Sabra just the yummiest?

Realitytvkids.com ~ Administrator said... 40

Hummus will even freeze well, so you could buy one of the big tubs and maybe divide it into tupperware and freeze, taking out one tupperware at a time for the fridge. Hummus is more like an occasional dip here and a healthy spread for wraps instead of mayo. I just don't eat enough of it to worry much about the minimal cost or bother to make it. I've made it before but it got stuck in my blender and was a pain to scrape out. Too much trouble.

My only complaint about Sabra is the texture is just slightly pastey. When you eat authentic hummus in the Middle East it's not like that. It's smooth and less thick, like a smoothie. But since I'm not going there anytime soon Sabra's still good enough and works for me.

Sorry if I was over detailed. I can get that way sometimes. :-) I'll work on that when I do my next recipe of hers. I thank Admin for posting it and for the feedback.

This was a fun project, actually, and I enjoyed doing it. My husband also liked helping out, as he has watched my "Gosseling" as he calls it from the beginning when I first realized something didn't smell right where they were concerned.

Yes, Admin, I do believe in being fair. And yes, you don't really need to cook her recipes to know they are going to taste overly tart/salty/etc.

There may be people considering buying her cookbook. I like reviews because they help me make informed decisions about how I spend my money. I want those reviews based on experience with the product and not because someone likes or dislikes the author.

Her fans do read here despite what they say. Her most loyal fans will dismiss any reviews of her cookbook that aren't automatic 10s. There may be some, though, that will read our reviews of her hummus, chili, and stir fry and will realize that this just isn't for them and their family. If our reviews helped them reach that decision and save them money, then it was worth the time I think we all put in.

Admin, is there a way to link to comments about the chili and stir fry? I think that would be really cool.

The bottom line is she does not want to work at a mediocre job, and that would be anything other than a media gig, or gigs. She is keeping that calendar free for the day where she is offered her dream job, the one that would give her that 50/50 split between travel home that she says is perfect for her. 2 years past her due date with TLC and she is still waiting. I doubt she ever works again, that money will keep her going until ?. I hope we are not still here talking about her when that happens :-).

I liked the post, too. I like the cost analysis, also being a detail person. :-)

I make my own hummus all the time. I start with dried beans, and grow my own garlic. And I use the food processor....mushes it up nicer.

I have to say that I didn't realize that hummus could be frozen. And I did think home-made was cheaper. I may have to look into that.

18 tbsp of lemon juice... whew! I can't say I have ever seen a hummus recipe with that much lemon juice.

TFW took an ordinary/simple recipe and jazzed it up. Now, NO ONE can say she is completely copying a recipe.

I suppose many of "her" recipes in the crookbook will be slightly off- to stop any accusations of copying.

I'll betcha in reality, she adds the proper amount of lemon juice when making hummus for her children.

Belch, and bleh.

Anonymous said... 57

Someone said the hummus recipe called for 16 oz canned chickpeas? We only have the 15 oz cans around here. Either she is using a specific brand that she probably can't mention without the ok from the company or she made it up to avoid it appearing she copied someone else's recipe. I think that's why the amount of lemon juice doesn't aglin with most hummus recipes ipeople are familiar with. Many recipes call for about 1/4 cup or less .I was thinking because her recipe had 3 cans so she had to increase lemon juice but still it should be only about 3/4 cup. I've never heard of anyone liking a very tart hummus. LOL!

I also love a drizzle of olive oil to finish it off. The last time I made it, I tried regular peanut butter as I didn't have tahini---wasn't quite successful and it didn't help flavor wise the next day. I ended up throwing it away. I will stick with tahini!

TFW is having a 'traditional braces off party' for the one of three kids who had braces until now.Didn't just Mady have braces before Hannah and whoever else got them on, so how can it be a tradition? That's an odd tradition anyhow. When my kids got theirs off, I would say 'be careful of those expensive teeth!' Actually they were sensitive for a while so no party here.I guess I'm not a fun mom or a Barbie mom like TFW...

Ex Nurse said... 59

Wow, Sillimom--thanks for doing this!

I haven't read all of the comments, so maybe someone already this.

To be fair, entire cost of the olive oil and tahini should not be assigned as part of the cost of this single fish--just the portion used--that was almost half of the cost right there.

Also, when comparing with the Sabra, equal quantities should be used. If her recipe yields 28 ounces, then you would have to buy 3 10oz Sabra to be equivalent. Seems like that would be a lot fairer method. Making those adjustments, I think, would put them pretty even in cost--Sabra ahead if you consider the prep and cleanup. It would be easy to just add more lemon to the prepared hummus.

Why does Kate not name which kid got their braces off? It's not like she wants to protect their privacy. She tweets what they say when they're having their shriekingly fun times together which is every waking hour or every day. Maybe they even have fun together when they're sleeping! She posts pictures of them, tweets what they eat.

Does she think getting 15 people to ask which kid got their braces off somehow signifies how popular SHE is as an in demand celebrity? Maybe a big network executive will be so intrigued about her braces on and braces off parties and M&Ms in the popcorn that he'll call her personally with an offer for her own show?

I think there was another corporation also, but don't remember the name. During the separation and subsequent divorce, it would make sense that they dissolved that corporation, and TFW set up one in her name alone. Especially since she was still working for TLC.
-----
A corporation is a legal entity, basically equivalent to a person. If one of the shareholders leaves the company, it is not necessary to dissolve it--the person leaving would be bought out, or can cede the shares to the remaining shareholder. There are several kinds of corporations that are treated differently for taxation. One type may be more advantageous to another, when circumstances change. Someone asked whether the kids money was taxed. If it was distributed as income, and paid to a corporation, then, it would depend on whether the kids were employees of thee corp, or shareholders, or both. I am pretty certain that the IRS would require they be paid as employees because they actively participated in generating the revenues. Any money paid as employees would have FICA/medicare as well as federal income tax, which would be reported on individual tax returns. And, some of it may pass through to them as shareholder distributions--it depends on the type of corp how this would be treated. A lot of income can be legally shielded from taxation through the use or employee benefits, and invested in various financial products that can appreciate in value, generate current income, and/or pay off at a future defined point in time ie college. It is useless to speculate about her financial situation--Jon's as well. It can be true that he has no money now, but there may be some retirement revenue or assets that he can't access without triggering a taxable event.

I enjoyed this recipe "review" very much! It was so thorough - with the cost comparisons between not only Whole Foods (yes, Whole Paycheck is what we call it among my friends as well) and Safeway organics, but between organic vs. non-organic options. I was surprised that the difference was rather small. But as you point out, the best value would be to buy already prepared hummus.

My best guess about the lemon juice is that Kate mis-read someone else's recipe and put down 18 instead of 8, or something like that.

I love lemons and I love hummus, but I don't think I would care for too-tart hummus. Unlike most professionally produced cookbooks, I doubt there was any serious testing done on these recipes, except by Kate.

I haven't worked in the nursing profession in a LONG time. However, the single most useful thing I learned were metric calculations for administering IV medications. Useful, because it makes converting recipes that I am multiplying into reasonable proportions.

1 tsp = 5cc
1Tbsp = 15cc (or 3 tsp)
1 cup = 240cc

Just knowing those 3 measurements will simplify cooking. Therefore, 18 TBSP = 18 X 15 = 270cc = 1 cup + 2 tbsp OR 1-1/8 cup.

In any case, the lack of simple conversions like this is what makes her an amateur. And, I agree with the poster who said that the quantities are ridiculous. Most people don't invest their time and money on an untried recipe. She is simply so ridiculous, it hardly warrants giving It any thought whatsoever. I just finished listening to Julia Child's autobiography. She was a consummate professional. She had friends send her ingredients from America, since her book is geared to American chefs. For example, she discovered that French ingredients for a pie crust required 1/3 less fat, because the flour there was higher in fat (guessing due to mass production that strips wheat flour). She was absolutely meticulous in her testing and measurements. And, there was absolutely nothing about her that would have predicted her success. She knew nothing about cooking--was looking for a way to pass the time (her husband was with the American Embassy in France. She was willing to start from the bottom, worked longer and harder then the men in her cooking class and was a collaborator. None of which can be said for TFW.

Same here. When I made the Stir Fry, I knew there were just too many peas, too much soy sauce, but it can be tweaked so that it would be much better (and it needed ginger). It was a recipe you could work with. The chili, on the other hand, well, I think it would really need some major tweaking, and it's something I really don't want to make again!

Lynne, it's a fact they got at least some dental care free for one point. It was at Jon's dad's office. Remember he was a dentist.

If I'm not mistaken she may have even admitted this on the show, it's that well known. I just can't remember the details.

(((((((((((

Yes, thank you! I meant that I had heard they got free dental care via Jon's dad's practice. I think somehow it got extended to orthodontics. People were giving them stuff left and right when the tups were born.

Realitytvkids.com ~ Administrator said... 104

I think it really depends on the ingredients how much you actually save. You could actually buy fresh chickpeas soak them and cook them and make it into a two day recipe and that would help make it cheaper. Fresh beans are dirt cheap and often go on sale. My store regularly runs sales on beans for 88 cents a pack and I stock up. One thing I like about being sort of half my meals vegetarian is it's cheaper. 88 cents for a huge pack of beans versus a pack of meat is a good deal.

Also you can get really great olive oil but it will cost you. You can get cheaper but you might be compromising on taste. I taste the difference.

I also put a value on my time and also the utilities you burn, even though usually small it's still part of the cost. For me when a recipe has a good store bought alternative and the homemade recipe itself takes a great deal of time, effort, dirties a bunch of dishes, burns a lot of utilities, I have to put some value on that and weigh whether it's worth the effort for what you get.

Hummus is not something I am just wild about so I'm not sure it's worth the time and effort and marginal cost difference if any. However, my mom's apple pie in the fall is worth the effort to me. It's a heck of a lot of peeling and getting just the right apple combination and slicing and making the crumb topping but it is worth the effort. I am willing to put in the time, effort and cost for the end product versus store bought. I don't feel the same passion for just hummus. :)

I like the recipe just posted. It looks quite balanced.

This is turning out to be pretty fun. So many of us seem to love cooking and I like discovering new recipes that people say are good as well as tips and tricks.

Hopefully everyone has seen it by now. What did you think of the Food Network star winner? I was kind of meh on all the finalists. It seemed rather predictable given who has won in the past--time to change it up.

Fortunately, I recorded it on DVR and when I realized the finale was this weird Q+A snoozefest, I forwarded to the end, which was void of any fanfare whatsoever.
The winner has a nice personality, but I don't see myself tuning in. That pretty much goes for any of the three finalists though.
I do catch 2 past winners- the Sandwich King and Melissa D'Arabian. Both quite watchable.

We have a lot of nerve!!

Also, if my kids went to a school that hired TFW as the school nurse, I'd pull my kids out of that school as soon as I heard the news. I wouldn't want her filming my puking kid or complaining that she was inconveinced and have him put on a cold floor. She doesn't have a nurturing bone in her body. She could NEVER be a school nurse. The braces thing sure seems like a lot to give them but I don't put it past them. Pennsylvania is a very generous state. They take care of their own.

It has a very sort of Midwest values, everyone chip in, church potluck type people. I think that's why when the Reading Eagle first started exposing them for taking advantage of people's good graces it was so hard for many people to accept or understand. They didn't like the entire idea of it, they would rather just not hear such a thing.

Little Big Head retaliated the only way she knew how by basically making fun of how he pronounced Italian words like spaghetti, which was how every America who is not being pompous pronounces them, of course.

Yes, I remember that, too. But orthodontics is a whole different ball of wax. I just can't imagine that, with something as expensive as orthodontics, they are going to treat the kids for free, unless, of course, she was promoting their business, which I haven't seen happening.

I wonder if all of those free hair cuts have met their expiration date, also.

Wasn't there some business relationship between Jon's dad the dentist and the new female partner who sent the kids ( twins) to Kate's old orthodontist? I believe- although I may be wrong- Kate got her braces as an adult free so possibly the kids too have reduced rates or even free orthodontia. Tucker that is wonderful. There is so much need for people to donate dental and medical care both here and abroad. There are so many generous doctors doing so. A rich family of multiples doesn't need such a thing. In LA Mel Gibson's ex wife has a charity where they fly little children from third world countries who need surgeries out here to UCLA I think where they can get top surgeries. Sometimes their parents come with them, sometimes they can't so they stay with host families.

Two of my good friends flew a little boy back here. Five year old, sick little guy coming to the USA all by himself! It's just wild! They arranged it with a trip they had preplanned. I think they got more out of it than the little boy.

It's a dip and a spread. In the middle east it's pretty much their substitute for anything that requires butter or mayo. They serve it at breakfast!

I mostly use it like a mayo substitute for wraps. Makes me feel like I'm being healthy. It takes some getting used to. I like the red pepper one, a little more character.

I'm not sure TFW really adequately explains a food that's not necessarily that common in many parts of this country.

I mean this is where the line between good cookbook and bad is drawn. How about a little blurb about your "hummus story." Where did you first taste it. Do you have a relative who traveled there or is from there who introduced it? A friend? You just stumbled upon it thinking you were buying ranch dip? I'm curious. My "hummus story" is because my best friend from law school is Lebanese and I could write a charming little blurb about how we had a traditional Lebanese dinner made by her mom our second week of law school when we all desperate to refuel and relax for a bit and try to take this unique but stressful experience all in. You don't usually start eating this where I'm from without context.

Sort of like, if I were to do a recipe book on like shepherd's pie, I might want to explain when and how I got acquainted with such a dish. Was I traveling to England, hosted a British exchange student, ordered it once in a east Coast restaurant because I was curious? The explanation need not be long but these sort of things bring depth to a crookbook.

To sowce a Pigge.

Scald a large Pigge, cut off his head and slit him in the middle, and take out his bones, and wash him in two or three warme waters. Then collar him up like Brawne, and sowe the collars in a fayre cloth. Then boyle them very tender in faire water, then take them up and throw them in fayre water and Salt untill they be colde, for that will make the skinne white. Then take a pottle of the same water, that the Pigge was boyled in, and a pottle of white Wine, a race of Ginger sliced, a couple of Nutmegs quartered, a spoonefull of whole Pepper, five or sixe Bayleaves: seeth all this together, when it is colde put your Pigge into the sowce-drincke, so you may keepe it halfe a yeere, but spend the head.

EXCLUSIVE ‘Little House On The Prairie Star Alison Arngrim (Nellie Oleson) To Testify Tuesday About Sexual Exploitation, Highlight Hollywood News

http://highlighthollywood.com/2013/08/exclusive-little-house-on-the-prairie-star-alison-arngrim-nellie-oleson-to-testify-tuesday-about-sexual-exploitation-highlight-hollywood-news/

On Tuesday, Allison will speak in support of Senate Bill 145 by Sen. Fran Pavley (D-Agoura Hills), which would raise the maximum penalty for egregious child pornography offenders.

Allison said: As a survivor of child sexual abuse myself, one of the things I am grateful for is that there was no Internet when I was a child,” Arngrim said. “Even though I will live with my trauma for the rest of my life, at least I do not have to suffer having my pain, degradation and humiliation re-run endlessly on a loop worldwide for sadists’ amusement.”

Thanks to kates greed and exploitation, those precious kids will be seen on a loop reel worldwide for sadists amusement.

My guess would be that it came from the craft services in charge of servings the meals on the television set that was also used as their family home. It's pretty much a staple here, on our sets. It's cheap, it's healthy, it's almost pure protein when you need a quick boost on a long shoot, it can be eaten standing up, it doesn't drip on the costumes, it stays fresh tasting, etc., etc.

Realitytvkids.com ~ Administrator said... 137

Shelby you should read Alison's book if you're interested in her facinating story, I did a review on it somewhere here. She's not talking about the set. She's talking about being molested for years by her older brother at home. She's saying thank goodness that's all just a memory and not documented by film to be exploited again and again as child porn often is.

Her experience on the Little House set wasn't humiliating at all. It was very good. It was actually her refuge. At least on the set she wasn't being molested. She was very close with Melissa Gilbert and some of the other actors, they got to hang out in Simi Valley which is very very far from L.A. and not like the L.A. scene at all (basically a horses and cows rural town), and sometimes even up in northern CA, and she attributes most of her good experience to Michael Landon who treated the child actors with respect. All of them have said the same about him. However she recognizes that she was very lucky and that many child actors do not have good experiences in Hollywood. Melissa Francis also talks about the set being basically all fun and games, stealing the candy out of jars in the store, crushing on the boy actors, being best friends with the twins who played Carrie.

Another interesting tidbit they all say is that Michael Landon was basically a one or two take guy. Some child actors have to sit there all day long doing the same thing in the hot sun or cold weather and that's awful. With Michael if he thought you got it on the first take that was it, cut and print. Melissa Francis was so into a sad scene about her parents dying she just started crying naturally even though she wasn't supposed to. Michael freaked out when it was over he was so happy she had cried so convincingly and she never had to do the scene again, first take. I think this is very good for child actors, helps keep things light and playful and avoids agonizing over the scene.

Alison's book also talks about the years of therapy she did when she was an adult. Not because of anything to do with child acting. Because of the molestation.

Found it easily there's the link to the book review.

This is where TFW just really misses so many great stories and blog fodder. A lot of people would be really interested in her adventures with craft services and other fun stories from the set. We know so very little about what went into this show.

The problem is she is so hyper focused on the lie only six people believe that she does it all on her own. She can't stand the idea of admitting an entire team went into who she is now. As a result she has let just slip on by a golden opportunity to get people interested in what she has to say.

PW has done a dozen posts on filming her show, which is also really a very scripted "reality". What goes into it, funny things that happened, who stands out on the crew, what everyone does, behind the scenes tales and photos. She just had a cute story about how there is a guy on set whose job it is to make sure no one is eating the food. If they have to refilm something the food can't be gone, lol. That was good, I think everyone always wonders what happens to the food. The posts get hundreds of comments.

&&

That is a great point. If you don't use up the ingredients in a timely fashion you can't fairly price only a portion of the ingredients for your final cost vs store-bought.

I for one can't think of any use for tahini. I guess I'd have to research that one to use it up and who knows if realistically that will ever happen. So for my true cost, I would have to factor in the full price of that product.

It's kind of sad to think of some sheeple who doesn't eat this way spending over 20 bucks on something like this only to have half the ingredients go rancid on them.

Another poster, too, said that the recipe is workable with only an adjustment of the ingredients. What has been said is, that because of some of the lack of clarity in directions (such as saute and steam) and confusion over some ingredients (what size bag of carrots) that she really isn't up to the level of many writers, such as Pioneer Woman, who can put out a best-selling cookbook.

Paula Deen update:

A federal judge has dismissed the racial discrimination claims in a lawsuit filed by a former employee against Paula Deen, the celebrity chef's representative said Monday.
The former employee can't claim to be a victim of racial discrimination targeting African-American workers because she is white, U.S. District Judge William T. Moore Jr. ruled. "At best, plaintiff is an accidental victim of the alleged racial discrimination," Moore wrote.
"There are no allegations that defendant Hiers' racially offensive comments were either directed toward plaintiff or made with the intent to harass her," the judge ruled.

*****

I post this one because I know so many of us have been following, But two, because it is a GREAT example of standing.

Lisa Jackson is a white woman. She simply does not have standing to claim that Paula Deen was racist. Even if racist remarks and attitudes were all around her, since she is white, they were not targeting at HER. It would be the same problem if you were straight around a homophobe, or a man around a womanizer. You may HATE what the other person is doing and saying but unless you are the one harmed and you are the victim, you're out of luck in court.

Standing is THEE number one hurdle to get past these days. They will kick a lawsuit so fast if you don't have standing. How in the world BV ever expected to sue anyone is beyond me. They have NO STANDING. THEY weren't harmed!

Hey whatever happened to their "class action suit" promise anyway? Gosh the sheep are dumb.

Tweet-le De Tweet-le DUMB said... 158

This is BV's explanation as to why he can file a class-action lawsuit against Kate's non-fans:

“After seeing death threats, pedophilia claims, theft & documented stalking against @Kateplusmy8 & fans, we’ve decided to file a class action lawsuit against the main offenders,” James tweeted from the Bullyville handle Tuesday. “The evidence is overwhelming and the victims deserve justice.”

It is not yet clear if Kate will be a plaintiff in the announced lawsuit, though an insider tells us McGibney does indeed have legal standing to bring this type of action without her, as some in the anti-Kate consortium have threatened his life, with one even accusing him of hiring someone to kill her."

Realitytvkids.com ~ Administrator said... 159

I'm sure her attorney explained there might be a standing problem. Apparently they tried an interesting argument that the whole environment and culture of racism and racial tension was toxic to her just by virtue of being in it.

Actually, I think it's an argument worth trying. It would have made for some interesting law on standing. But I would hope the attorney would have told the client we have a snowball's chance in h$$$ of that one. Think how far you could take that if that worked. You could basically walk into any kind of dysfunctional situation even if it has nothing to do with you and cry racism or discrimination or what have you. That's probably not gonna fly.

I'm just so shocked that no one was talking about this fact. Were people afraid to talk about it? Afraid to say wait a minute how can she be "racist" toward a white woman?

Realitytvkids.com ~ Administrator said... 160

He only has standing for specific threats made directly at him. By all means go after those people. (Or um maybe call 911 if there is really a death threat??) But he has no standing to do anything on Kate's behalf or the fans' behalf. NONE. The ONLY thing he can do is go after specific and DIRECT threats toward HIM.

Don't the fans ever follow up with him? He promised to help. Are they afraid he'll turn on them too if they question him?

I didn't know that, either, until I read the news article last night. How can you claim racial discrimination if you are the same race as the person who you are suing? Unless there was much more to the suit than just racial discrimination, wouldn't you think Jackson's attorney would have explained to her that in order to bring such a suit there actually has to be a case of discrimination -- unless he/she was banking on something else going on there, such as employment mistreatment, being subject to hearing racial slurs being thrown around, etc.?

Blowing In The Wind said... 162

Standing is THEE number one hurdle to get past these days. They will kick a lawsuit so fast if you don't have standing. How in the world BV ever expected to sue anyone is beyond me. They have NO STANDING. THEY weren't harmed!

------------------

Right, but couldn't they claim that they were emotionally harmed because hearing racial slurs, and being subjected to them in the workplace contributed to a environment that was not conducive to an acceptable place of employment?

Blowing In The Wind said... 163

Hey whatever happened to their "class action suit" promise anyway? Gosh the sheep are dumb.

I don't know, but BV has tweeted that he plots his revenge silently and psychotically. Interesting, since "psychotically" means being done by someone with a psychosis.

&&&

That's what they tried to. Didn't fly. The courts are very clear on standing and have been for hundreds of years--whatever harm you are claiming must be directly at you. Even if there is a strong connection to the harm like you're around it, that's probably not enough.

I can see being in that workplace environment even as a white woman would be very uncomfortable. But unless it's directed at you, you're out of luck. Big fail, they should have gotten an African American employee to bring the suit.

Actually I think this would have been a landmark case on standing had this claim gone through. Now WHITE people could claim racism.

OrangeCrusher1 said... 165

The judge dismissed half of the lawsuit. The plaintiff does have standing in the sexual harrassment charges.

As for Kate, she may be an ok cook, fine, but how many of us are much better cooks (I know I am), and we are not writing poorly designed and flawed cookbooks. Just another attempt to cssh in on her perceived notion of celebrity. And numbers don't lie, that 'celebrity' has left the building. As for pasting pics of her child and the braces party, she is shameless in her exploitation. Again, such fun they have in their insularity.

Realitytvkids.com ~ Administrator said... 166

Yes the other part of the lawsuit can go forward, but this was a big victory for Paula. The sad thing is it doesn't mean Paula didn't say nasty things. But now it's a victory in court. And frankly I think the media looks kinda stupid for going on and on about this without ever mentioning oh she's WHITE. Um, game changer! They were SO focused on her saying the N word 20 years ago they forgot the most important fact of this entire story. Oops.

This is another example of how just because you "win" in court doesn't always mean you were in the right. It just means by the rules of the game you came out on top.

She's in a frenzy right now, trying to drive people to her site to buy this darn book.

&&&&&&&&&&

Desperate times call for desperate measures. Judging from her pre-order sales, these last few months and the dismal sales call for her to do something -- ANYTHING -- to get people to that site. When has she ever published so many photos on her site? It's only been recently, and the sheep are too dumb to see it. They think that she loves them, and because they are asking to see photos of the kids, she's doing this for them out of the goodness of her heart.

Yeah, right, and we'll all sell the fans some swamp land in Florida...sink holes included free of charge.

And of course she had to post the pics on her lame website.

Kate said another child is getting braces in a month, maybe a boy. I agree; I think all of them need them. But I do think their orthodontia is free or reduced price. I wonder if Hannah at nine is done- didn't the orthodontist say with Mady that she would have braces a year at that age then again at around 12? I hope they all don't need two rounds!

Melissa NV said... 171

&&&&&&&&&&&&

Maybe he's in line for braces. Maybe there's a reason he doesn't have them yet and orthodontists have advised her to wait because of jaw growth. Sometimes kids are ready for braces before others. Treatment plans aren't always the same for all children.

Realitytvkids.com ~ Administrator said... 172

Deliberately withholding the name of the child who got their braces off when she saw a slew of tweets asking, and then using that information to get people to go to your web site to find out, is pretty darn sick.

Basically her own children are bait. They'll see it someday. Karma is coming.

I'm sure the dentist is making recommendations who is getting braces when, I wouldn't be concerned about that. However it might make a child who still has crooked teeth but isn't ready for braces yet for whatever reason feel pretty self conscience that the girls are early "teeth" bloomers and through their treatments already.

OrangeCrusher1 said... 173

But it does not change what she said in her depostion, which if I recall, is what set off the firestorm. She may not have deserved what happened after that, but her words, and her attitude did her no favors.
It may be a big victory for her in some ways, but I don't see her endorsement contracts returning for awhile, if ever.

Kelly H. said... 174

We are currently in phase 1 of braces- to fix a cross bite. I am guessing that is what Hannah had braces for (or something similar). My daughter was 8 last fall when she started with an expander in the upper teeth. You turn the expander until they are pleased with the progress. After that, braces are put on the top 4-6 teeth (depending on the amount of adult teeth involved) to bring them back together. She gets her expander out today and then we proceed with the braces for a little longer.

We will re-evaluate at 12 to see if further work is necessary. Our ortho will not do a full set until a majority of adult teeth are in.

Speaking as just one person, I can say that my perception of Paula Deen has changed irrevocably. I have absolutely zero interest in watching any show she hosts or is part of; won't buy a single one of her products or books; and generally would prefer never to hear "Miss Pauler" again. That goes for her sons as well.

That's the result of reading her deposition, reading the details provided in the complaint, and becoming completely disgusted.

However, I have a friend on Facebook who has recently been posting updates about Deen, because she loves animals and so does he. So he's clearly on her side and feels she's been wronged.

Only time will tell whether the general public wants more of Paula Deen. I know I don't, but then again, I often seem to go against what the majority seems to want. :)

I thoroughly agree with you, and it's definitely sick to do so. She shouldn't be mentioning anything about the braces at all, no less posting pictures of the child.

I did have to laugh that she posted 2 pictures of the cake, with one of them having lousy exposure. What was the purpose of that?

Another thing I noticed. Every time she makes a new post, she apparently has to remove the pre-order post, and then re-post it, because the date on the pre-order post keeps changing. It now shows today's date. She just has to make sure that that post is always the first post.

BTW, I do believe that Kate thinks her food is delicious, that she deserves what she has, should be a TV show talk host, the only mother on the planet, a great mom, etc.etc.

That is a great point. If you don't use up the ingredients in a timely fashion you can't fairly price only a portion of the ingredients for your final cost vs store-bought.
----------
A good cookbook, especially one that claims to be economical, will have other recipes that call for those ingredients, and provide cross-references in the index. If I come across an ingredient that is unusual or expensive, it is a deal breaker. Case in point is toasted sesame oil. I can't tell you how many bottles I have purchases and thrown out. It has a very distinctive smoky flavor that I love, but it is just too wastefu. I would rather give the business to a local Chinese restaurant.

I think it's very easy to say that with a straight face. I see Kate in Hannah...the smile, the facial structure. Obviously, there's a heck of a lot of Jon in there too. I disagree. I don't see any of Kate in the kids, regardless of the race. Look at Alexis. She has very wide-set eyes and a broad face. Kate is just the opposite. She's going to be very pretty as she matures, but there is nothing of Kate in there. Put a photo of Cara and Mady next to Kate, and you'd have to really be scrutinizing to find any similarities in their physical features.

The reason I like to see Kate's recipes is because she continually says ALL her kids give her recipes extremely high praise. They all like all the same stuff all the time? Are they terrified to say what they really think, is Kate exaggerating what they really say, did Kate even ask them? To have 8 kids completely agree on what they like all the time could be a MIRACLE! Who isn't interesting in observing and discussing a MIRACLE?

Food presentation is a big part of it. We've seen photos of the food Kate prepares, and the appearance has made me gag. I mean actually gag, and that doesn't happen to me often. "She's sh** for a cook." And guess what the food looks like?

And then we have the ingredients which Kate herself lists. I'm not a great cook, but I don't claim to be one, either. However, even I wouldn't throw some of that stuff together. If I'm mediocre (nod to Kate) and Kate's below me, I think that would qualify as bad.

I see NO resemblance between TFW and ANY of her children. It has nothing to do with hair color,
eye color, skin color or heritage. I don't think they really look like either parent, although it would be easier to pick Jon out of a lineup as their Dad.

I don't think they look much like each other, either. I think they all look quite individual and unique, and I wish their mother would treat them like they are. Each one is a beautiful child/teen. Each has classic beauty/handsomeness and each has a little something that makes them "real world" - something a little imperfect. Like all kids.

I hope THEY see their individuality even if their mother doesn't seem to be able to.
